Baked Oatmeal Recipe
This is soooo delicious! My friend Megan made this for a mama coffee date and it was sooooo good!
thought I'd share!
Baked Oatmeal
from my friend Megan
3 cups regular oats
1/2 cup oil
2 eggs beaten
1 cup sugar (can use Splenda)
2 tsp. baking powder
1 tsp salt
1 cup milk
half and half
frozen strawberries
Mix together all ingredients except fruit and half and half in a bowl and pour in a casserole dish. Bake at 350 degrees for 30 minutes (I usually bake about 25 minutes). Serve heated with half and half and frozen strawberries (fruit) on top. (I usually let everyone serve themselves and put half and half and fruit on top). Most of the time she makes this without the half and half.

TUBES
Will has had his fair share of ear infections over the last year or so – after a visit to the ENT last week, we all agreed it was time to help the little guy out in this department and hook him up with some tubes for his ears.
The appt. was at 7:30 yesterday (24th) and was simple and quick. Here are some pics:

Women and Sports
Ok Ladies!
Now that football season is upon us, I highly recommend that we get a little better "trained" on what in the world is actually happening on the field. I admit, I was the head cheerleader in high school that had to ask around the squad, "Are we offense or defense?" so I could call the right cheer. If only I had this brilliant girl there to teach me back then and relate everything in "girl talk."
I'm telling you she's GOOD!
I personally think this should be a required course for girls in high school or at least a lesson during a sorority meeting. The boys would have loved it!

Labor Day Weekend

Kari and I were visiting on the back porch when I turned around and saw this! Will had climbed to the top of the car and was just standing up there. wow. saying that he is a climber is an understatement~!
my sis, kari came to visit friday for the night! We enjoyed having her!! We made tacos for dinner, Rice Crispie treats for dessert and even got a tiny bit of shopping in! Thanks for the visit kari!
LSU played/won the first game of the season! what a perfect opportunity for Will to show off his jersey!! Kari and I had a little photo shoot with him saturday morning before she left to get some “framer” pics of Will in his LSU gear. My brother just started as a freshman there and kari is a die-hard LSU fan… I graduated from there, but rarely make it back for visits… I’m certainly not hard core like her… she lives for football season! I know she is thrilled!

MEET THE TEACHER!
We had the pleasure of meeting audrey’s preschool teacher, Ms. DeWese – unfortunately it was a bit crazy and I didn’t get a picture of Audrey with her teacher, but that’s okay.. I can get it the first day of preschool.
We had an “open house” meeting while the kids warmed up in the classrooms..
this first one – she wasn’t so sure about all of this.. but you will see how she quickly warms up :)
in the reading corner.. where it was a bit quieter.. there was mass chaos as the boys of the class were FLIPPING out – sobbing, throwing fits etc.. and the girls were all very reserved and taking it all in.
this sight made me a bit sad.. it is so official! We have never had a “beginning of the school year” kind of moment since Audrey popped in her preschool class mid year last year.. *january
this was much more like kindergarten, larger classes and procedures, take home folders etcc..
aaaaand this is how Will behaved. poor dear. I had no idea he had a major ear infection at this time – the next day his ear drum busted because of all the pressure build up.
First day of school is Tuesday!! I’m so excited for her – I know she will LOVE it!

OUR BEST BITES’ GARLIC AND ARTICHOKE DIP

Garlic Artichoke Dip
Recipe by Our Best Bites
2 8-oz. packages cream cheese (light works great), softened
1 c. mayonnaise (no Miracle Whip or fat free mayonnaise, although low-fat mayo also works great)
1 c. (packed) shredded Parmesan cheese (try to get a wedge and grate it yourself; the pre-shredded stuff in a bag doesn't melt well)
1 12-oz. jar MARINATED artichoke hearts, drained and chopped
6-7 cloves garlic, minced
Preheat oven to 350. In a large bowl, mix the softened cream cheese with the mayonnaise and shredded Parmesan cheese. Gently add in the chopped artichoke hearts and minced garlic. Place the mixture into a 9" pie plate (or divided evenly among smaller dishes) and bake for 25-30 minutes or until it's lightly browned and bubbly on top. Serve hot with slices of bread and/or tortilla chips.
