So Good - It's Bad!

Charles' Aunt Sandra always brought this homemade English Toffee in town for Christmas and this year I got the recipe.. I am just now getting around to making it myself - and this stuff is a MAJOR weakness of mine. It is the perfect combination of salty and sweet and crunchy... I absolutely love this stuff - and actually had all the ingredients already on hand!! oh and p.s. - (you make it in the microwave!)



1 stick margarine
1 cup sugar
1/2 teaspoon of salt
1/4 cup water
1/2 c fine chopped pecans

1/4 cup fine chopped pecans (for the top)
3/4 cup semi sweet chocolate chips

  1. 1. Take cookie sheet and grease (I spray pam) a 9" to 10" circle on surface and sprinkle with 1/2 cup fine chopped pecans and set aside
  2. Take a big glass bowl and run stick of margarine on the inside rim and on top of bowl. Put rest of margarine (yes the entire stick) in the bottom of bowl.
  3. Pour in sugar, salt and water. Do not stir.
  4. Put in microwave from 9 to 12 minutes on high. (mine took exactly 11 minutes in my old microwave - in the new house it takes 9..keep an eye on it!) When you take it out it should be bubbly and a light pale beige color. (*If it burns - throw it out and start over) Pour it over the pecans on cookie sheet. Top with semi sweet chocolate morsels, let sit for 1 minute and then spread with a knife. Top with 1/4 cup of pecans and put pan in refrigerator or freezer until cooled completely. Break into bite size pieces.
  5. It doesn't look like you've made much of it at this point, but once you start breaking it up it actually makes a good bit.
This is a great homemade gift idea (for any holiday or party)- especially with Valentines day coming up.. just put some in a bag and tie a cute ribbon on it and Voila! You've made a super sweet and thoughtful gift!
